Menu for April 11th-15th

Here's the plan for this week:

Monday

Sometimes I have a hard time finding hominy at Central Market. If you can't find hominy, just interchange it with corn. Be sure to take out the seeds of the chiles in adobo sauce. Those things are spicy.

Tuesday (Meatless day!)

I always forget to thaw the spinach!

Wednesday

I've made this dish before, and I froze the extra meatballs. Micah really loves subs!

Thursday
I will probably cook my chicken that night in a skillet, shred, then throw in the casserole.

Friday
I'll serve this along side some mashers. MMMM, mashed potatoes.
