Spotlight Ingredient: Spinach

I bought this giant box of spinach. It was only a $1 more for the GIANT box, and you get double the spinach. Problem is there is only two of us. How are we going to eat it all?!

For dinner I made spinach and tomato pasta with a spinach side salad. I garnished the salad with strawberries and almonds.  Just call me Popeye today!
